2 tablespoons olive oil
4 spring onions
200g canned sweetcorn, drained
150g bottled roasted red peppers
4 medium eggs, beaten
125g strong Cheddar cheese, grated
1 small handful of chives, finely chopped
½ red chilli, deseeded and finely chopped (optional)
Salt and pepper
Preheat the grill.
Heat the olive oil in a large frying pan, over a medium heat.
Add the spring onions, sweetcorn, chilli, and red peppers and sauté for 30 seconds.
Stir in the eggs, Cheddar cheese, chives and season with salt and pepper.
Leave to cook for 5 minutes-until the base has set.
Place under the preheated grill for 3-4 minutes or until golden and set.Cut and serve immediately. Serving suggestions: Green leaf Salad.
