Fireworks Chicken

100ml Sriracha

1 tbsp Soy Sauce

100ml Soft Brown Sugar

1 tbsp apple cider vinegar

1/4 tsp red chilli flakes

2 garlic cloves

1 tbsp olive oil

450g chicken breast or thighs, skin removed and deboned

salt and pepper

Heat oil in a large frying pan, lightly season the chicken with chilli flakes,salt and pepper.Add it the pan and brown each side( approx. 4-5 minutes).

In small saucepan heat together the sriracha, sugar, soy sauce, vinegar and garlic.Stir the mixture continuously until the sugar has fully dissolved.

Transfer the chicken onto a baking sheet or oven proof dish and baste with the sauce (leave enough sauce to baste the chicken at least twice and to serve) and bake for 10-15 minutes.
