One-Pot Chicken with spiced rice

4 tbsp olive oil

4 chicken breasts

1 yellow onion

2 garlic cloves, crushed

2 tsp ground cinnamon

1 tsp ground allspice

1/4 tsp cayenne pepper

1/4 tsp ground cloves

1/2 tsp ground nutmeg

1/2 tsp ground ginger

1/2 tsp black pepper

1 tsp salt

300g long grain rice

750ml hot chicken stock

Instructions

Heat some oil in a large saute pan or frying pan, add the chicken and fry cook for about a minute on each side to add colour.Once browned, set aside.

Add a bit more oil to the pan and fry the onion for 4-5 minutes,until softened.Add the garlic and fry for another minute.Add all the spices and seasonings and fry for a further 2-3 minutes.

Add the rice to the mixture, pour over the stock and return the chicken into the pan.Cover with foil or a lid,reduce the heat and leave to simmer for 20 minutes until fully cooked.

Serve immediately with a sprinkle of parsley…optional of course.
