Cheddar and Chilli Souffles

25g unsalted butter

2 tbsp plain flour

250ml milk

100g cheddar cheese

3 egg, separated

2 tbsp chopped chives

Pre-heat the oven to 200C/Gas Mark 6.

On a low heat melt the butter in a small saucepan, add the flour a cook for a few seconds.

Pull the saucepan away from the heat and whisk in the milk until smooth.Return to the heat and cook for a minute until thickened.

Leave to cool slightly then beat in the egg yolks, cheddar cheese, coriander, and salt and pepper.

In a large bowl,whisk the egg whites until soft peaks form.Fold the egg whites into the egg mixture.DO NOT stir as this will knock the air out.

Spoon the mixture into 4 greased ramekins, place on a baking sheet and bake for 15-20 minutes.

Serve immediately.
