Greek Vegetable Casserole

4 tablespoons olive oil
1 onion, finely sliced
3 mixed peppers, deseeded and cut into rings
4 garlic cloves, crushed
4 tomatoes, chopped
200g feta cheese, cubed
1 teaspoon dried oregano
Salt and pepper
Chopped flat leaf parsley

Preheat the oven to 200C /400F/Gas Mark 6.
Heat 3 tablespoons of olive oil in a large frying pan.
Add the onion, peppers and garlic and sauté until soft and slightly brown
Season with the oregano, salt and pepper.
Stir in the tomatoes and cook until softened.
Transfer to a casserole and drizzle with the remaining olive oil.
Cover and cook in the oven for 15-20 minutes.
Garnish and serve immediately.
